Mint Julep Spritzer

Most of the work can be done the day before you serve this so you can enjoy a gathering with friends and family even more.

  • 2 cups water
  • 1 cup sugar
  • ? cup freshly squeezed lemon juice
  • 1 cup (packed) fresh mint leaves (I use Kentucky Colonel Spearmint)
  • 1 cup bourbon
  • 2 10 ounce bottles of club soda
  • 6 cups crushed ice
  • 8 fresh mint sprigs

Bring the water to a boil. Add sugar and boil one minute. Allow to cool and add lemon juice and mint. Crush mint with the back of a spoon to release flavors. Refrigerate several hours or overnight. Strain mint and discard and add bourbon.

Pour into tall glasses, top with club soda and garnish with a mint sprig.

Serves 8. Mint syrup will keep for several days in the refrigerator.
