Herbal Ice Cubes

by Trisha

Make any beverage more festive and prevent dilution of the punch by freezing part of the base liquid into colorful cubes.

  • Fresh herb sprigs
  • Small slices of citrus fruits, preferably organically grown -oranges, key limes, kumquats
  • Edible flowers — pansies, roses, begonias, nasturtiums, violets
  • Fresh fruits – Strawberries, pears, grapes, cranberries, plums, pineapple, starfruit Water or herbal tea (Boil water first or use distilled to have clearest cubes)
  • Ice cube trays

Slice the fruit into small pieces and place in ice cube trays. Add the herb sprigs and flower petals. Cover with water or tea and freeze. Remove from trays and store in airtight containers until you are ready to use them.

To make a large ice ring, use a decorative mold or bundt pan and freeze in layers, adding more flowers and fruit with each layer. An ice ring will last longer for parties.
