Lavender Drop Cookies

A delicious cookie to serve with herbal teas.

  • ? cup butter or margarine
  • ? cup sugar
  • 1 egg
  • 1 tablespoon lavender buds, finely crushed*
  • 1 cup unbleached flour
  • 1 teaspoon baking soda
  • ? teaspoon salt
  • 1 teaspoon finely chopped lemon zest
  • 1 teaspoon finely chopped mint

Preheat oven to 375 degrees. Cream together the butter and sugar. Add the egg and the lavender and mix well. Sift together the flour, soda and salt. Add the dry ingredients to the creamed mixture and stir in the lemon zest and mint.

Chill the dough for thirty minutes. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake in the preheated oven for 7 to 10 minutes. Cookies should just brown slightly.

Transfer from the pan while still warm. Yields 16 cookies.

*Use a mortar and pestle to crush.
